Budget mb+r5 7600 or mid range mb+ i5 12400f

Because of budget, I have two options. To get a budget £100-120mb and the ryzen 5 7600, or a mid range £140-160 mb and the intel i5 12400f. I want a pc that will last a long time, and it will be at least a few years until i upgrade my cpu/mb. What should I go for? I want to game in 1080p and 1440p (7700xt as gpu) and do things like blender animation and 3d modelling.

I'd get the 7600, most budget motherboards on AM5 aren't bad at all. You could also consider the discounted 12600KF (around £150).

You're aware that AMD cards are generally less effective in 3D work versus nvidia, right?

Yes, but I’m no professional, just as a hobby. The 7700xt is currently at £420 here - what else would you recommend for a similar price point?
For 3D work only, the 4060 Ti 16GB is MUCH faster than the 7700 XT (this is subject to driver and app updates).

For gaming, the 7700 XT is a decent chunk faster than the 4060 Ti.

AM5 route, you then have a bit more upgrade headroom and probably even be able to use Zen5. If you go for a 12th gen Intel you'll likely end up with a cheap B660 and you know that 14th gen is your max possible upgrade.

If I was to go with the 7700xt, I’m not looking for high end animation, so would it still be sufficient
I have a 6900XT and Blender runs great, I don’t do much, just open files and do a bit of tweaking then export as .obj files so I can use them in 3D code I'm working on. A 7700xt should be fine unless you need CUDA.
