This is currently what my PC is using after the PC has booted up and just sitting on the desktop. This is without me doing anything to the system

for whats its worth i run plex on a
Raspberry Pi 4 Model B Rev 1.4

storage is synology ds414, just upgrade disks to 4*18TB drives

tv recording device homerun quad.

been running this now for 4 years or so, serves music/ videos and tv recorded programs.

Plex is super lightweight in my experience. I am using an i5-4590 Dell OptiPlex 3020 with 8GB of ram. It uses 20w/h in idle with 1 large HDD and an SSD.

Edit: and my original use case I was always home when I used it, so it just ran in the background of my main PC.
